Bidis Chardonnay - Sicilia DOC 2016 The Bidis wine is a powerful, intense yet delicate white.

From the Terra Bianca (white soil) site, the DOC Sicilia Chardonnay, produced entirely from Chardonnay grapes, fermented and then aged for twelve months in new oak barrels and, as well, for four to six months in bottle, shows a golden yellow color with greenish highlights. The aromas are complex and intense, rich in sensations of ripe fruit further enriched by sensations of vanilla, hazelnuts, and spices with much elegance and balance This vineyard is located atop a small plateau standing 250 meters above sea level, with poor calcareous soil that guarantees excellent depth.

The grapevinessuffer a little here, failing to grow vigorously. This condition makes it possible to obtain an excellent fruit concentration which, thanks to ventilation, does not over-mature.

A lovely match with elaborate fish-based first or second dishes, sea food and shellfish, vegetable plates, quiche Lorraine, “bottarga” (pressed fish eggs), and “maco”, the classic Sicilian dish of fava beans and wild fennel.
